Peanut butter cookies are at the top of my list as my favorite cookie! There are MANY ways to make them, a lot of people simply just buy them though. Here is the easiest most versatile recipe I’ve used to make them. you can make the recipe to be chewy & soft, or make them crisp & crunchy. I like the chewy, my best friend loves crunchy.
here is what you will need:
1 Egg
1 cup sugar
1 cup peanut butter (creamy or crunchy)
1 tsp vanilla extract
Preheat your oven to 350
For chewy and soft cookies:
Mix the ingredients in a bowl with a spoon (its very important to only use a spoon in this case) once all ingredients are mixed, don’t continue to mix, over mixing will result in not so soft cookies.
Spoon off about a tablespoon of the mix, roll it then place on a parchment paper lined cookie sheet. take a fork and criss cross in the middle to flatten the cookie. back for 10-12 minutes or until they seem done and not gooey in the middle. If you over cook them to a golden edge they will end up crunchy on the outside.
Now, If you like crunchy cookies, you can do the same mix, but with crunchy peanut butter, except this time you can use a mixer instead of spoon to mix. once the mix looks like a bunch of crumbs.
Now same as instructed previously, take about a table spoon size and roll into a ball and criss cross with a fork, they may act a little crumbly and thats ok, they will cook together. Bake them for 15-18 minutes, or until golden brown in the middle, once cooled they will be crisp & crunchy. I even tried doing them with squares, I flattened the mix and cut squares out to bake.
