I seen a picture of these mini lasagnas and had a big AHA moment. These are so delicious, small portion, quick & easy and great for a party or get together. No one serves lasagna at a party, but like this these make a wonderful appetizer, & be the talk of everyone. Not saying you will replace Martha Stewart (Because I’m in line next 🙂 ) But its definitely not something others are doing. So here’s the recipe.
Now, There are two ways to make them, you can be quick & simple or you can be homemade. Either way they taste great. Remember, My saying is this, anytime you alter or add to something bought, it has now became homemade.
Here are the ingredients.
24 wonton wrappers (usually by the tofu at your grocer)
1lb ground beef (or turkey)
2 cloves garlic, minced
Cheese options (whichever you prefer)
4oz cream cheese (room temperature) & 12oz cottage cheese
Or
16oz ricotta cheese
½ cup chopped onion
1 ½ cups mozzarella cheese
1tbsp Italian seasoning
1tsp garlic powder
1 Jar marinara sauce (I always add a little Italian seasoning & garlic powder to add more flavor, but that’s optional)
OR
For homemade sauce:
14.5oz crushed tomatoes or tomato sauce
3tsp dried oregano
1tbsp Italian seasoning
1tsp garlic powder
½ tsp dried basil
Preheat your oven to 375. Grease a muffin pan with cooking spray.
In a skillet, brown your ground beef, onions, & garlic cloves together & strain.
(If your making homemade sauce) In a separate sauce pan, add the tomatoes, oregano, Italian seasoning, garlic powder, & basil. Cook on medium high and constantly stir for 30 seconds, until it starts to bubble on the sides.
In a separate bowl add your cottage & cream cheese & mix until blended (or ricotta cheese) and stir in Italian seasoning.
I used the bottom of a glass to press the first wonton into the muffin pan, then like regular lasagna start your layers, I used a regular table spoon (not the measuring one, but the one you eat with) and added a dollop of the cheese mixture, a spoonful of meat, a spoonful of sauce and about a tablespoon size of mozzarella cheese, then at another wonton wrapper & layer again with cheese, sauce, meat, & mozzarella. Bake for 10-15 minutes or until the cheese is melted.
Tip: I didn’t like the edges they were a stale crispy tasting so I took a biscuit cutter (or you can use the top of a glass) and cut out the edge for the second wonton wrapper on top.
