I ran across this recipe on Allrecipes.com and thought OMG That looks great, as you know I LOVE to mix desserts and make something different. This is just another example of a great combination. I just had to mix it up from the recipe (as usual). Brownie batter on the bottom, then strawberry cake mix, then cream cheese icing, HOW CREATIVE AND GOOD! I love strawberry cake, so this was already a winner. Here’s how to make them. (Ok Maybe I made a video for these, but it turned out HORRIBLE, it was supposed to be a video from Gaytha Stewart, But it was Bad, Sorry)
Heres what you will need:
36 baking cups
1 box strawberry cake mix ( 3 eggs, 1/3 cup oil, 1 cup water)
1 box (Family size 13×9) brownie mix (or find how to make boxed version brownies) (2 eggs, 1/2 cup oil, 1 tsp vanilla)
1 package cream cheese icing
Preheat your oven to 350°
First, line your muffin pans with baking cups, then prepare your brownie mix, add brownie mix, oil, eggs, vanilla & stir until mixed.
Then, take a spoon full and fill the bottom of each prepared baking cup, filling it 1/3 full.
Next, prepare the cake batter, stir cake mix, eggs, oil, water, (I add pudding to my mix 😉 ) until mixed.
Once mixed, take a spoonful of the cake mix and dollop on top of the brownie mix in the baking cups, filling the cup to 2/3 full.
Bake for 15-20 mins until the edges look lightly golden.
Once cooled, prepare your icing, Now you can use it straight from the package, or if your like me, I like to “add a little” to make it not have that “bought” taste. I add about 3 tablespoons of powdered sugar, 1 tablespoon milk, & 1 YES JUST 1 drop of vanilla extract, and I use the Cake Icing Tip to put it in a bag & ice the cupcakes.
Tip Alert: You can use any flavor cake mix, Orange Chocolate? Double chocolate? They all sound good to me!
