The other day I was CRAVING some Cajun Chicken Pasta (I know, who craves spicy food in the summer especially as hot as Atlanta has been) but I was wanting some. Taco Mac in Atlanta has really good Cajun Chicken Pasta, but I didn’t feel like driving there, parking, getting a table, then waiting for it ( I know that sounds lazy:)). So I remembered this recipe that I made years ago and automatically made me hungrier its SO good, and easy. Heres the Recipe.
You will Need:
2 Skinless Boneless Chicken Breast, cut in pieces
4oz pasta (I used half a box if that sounds easier :))
4 teaspoons Cajun seasoning
2 tablespoons butter
1 red bell pepper, sliced
1 green bell pepper, sliced
1 red onion, chopped
1 cup heavy cream
1/4 teaspoon dried basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/3 cup grated Parmesan cheese
Directions
First, bring a large pot of salted water to a boil, Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Next, Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat.
In a large skillet over medium heat, saute the chicken in butter until almost tender
Next, add the red & green bell pepper, and red onion. Saute and stir for 2 to 3 minutes. Reduce heat.
Then, add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper.
Stir in with the cooked pasta(you will need a bigger pot than a skillet), toss and stir it until fully heated throughout. Add Parmesan cheese to top.
Tip Alert: Taste the sauce as you go, If you want it spicier add cajun seasoning one tablespoon at a time.
