As I’ve mentioned before, I love Peanut Butter cookie, well I LOVE sweets. Since becoming a healthier eater, and cutting sweets & sodas out of my diet (along with a whole new plan, later to be posted) I haven’t craved sweets like I did before. Every now and then I do WANT something sweet. This recipe is great, Like most peanut butter cookies it doesnt involve any flour. The trick is swapping out other ingredients to make it a healthier version.
Heres what you will need:
1 cup unsalted Peanut butter (Organic, All Natural, or freshly ground is the best)
1/3 cup Honey
1 Whole Egg
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup mini dark (or 60% cocoa) chocolate chips
Mix all ingredients together except the chocolate chips, once mixed stir in chocolate chips.
preheat your oven to 350.
Place tablespoon sized balls on baking pan, and flatten with a fork or spoon and bake 10-13 mins or until edges are golden brown. I actually placed mine in a muffin pan to cook them all the same size and shape.
Let cool & serve.
HOW SIMPLE WAS THAT! A healthier version to a classic cookie.
