We all love cheesecake, but cheesecake isn’t really healthy. Since changing our eating habits and going healthier most desserts and sweets don’t really fit in line. I honestly haven’t really had any “sweet” cravings, except last night, I got a craving and really wanted some cheesecake. I knew it couldn’t be hard to “change” up the ingredients to make it healthier than regular cheesecake but just as delicious. Heres the recipe
For the crust:
5 tablespoons melted “healthier” butter type (Icantbelieveitsnotbutter etc.)
13 low fat Graham Cracker Sheets (full sheet)
1/4 cup Stevia
1/4 tsp coarse sea salt
For the Filling:
8 oz greek yogurt Cream Cheese
1 1/2 cups stevia
1 tsp lemon juice
1/2 tsp sea salt
3 large eggs
1 cup Greek yogurt (You can use flavored yogurt for flavored cheesecake)
First, Preheat your oven to 375
Next, take the graham cracker sheets, stevia, sea salt and pulse until its all crumbs, then add melted butter and pulse until combined, press into a spring form pan.
Bake until crust is set (12-15 mins) & let cool.
Next, make the filling mixture, In a mixer, beat cream cheese until fluffy, slowly add in stevia, once combined, add in eggs and lemon juice, until combined, then last beat in greek yogurt. Pour into pan on top of cooled crust. Take foil and cover the bottom of your springform pan, submerge into a cake pan, deep pan, or roaster thats filled with water until about half the height of the spring form pan. Bake for about 1.5 – 1.75 hours until fully cooked in the middle.
Once cooked, let cool for about 20 minutes. Once cooled take a sharp knife and run around the edge to separate from the pan.
Once cooled, cut and serve. This cheesecake is a healthier version to regular cheesecake, it definitely tickled my sweet spot 😉
