Chicken Nuggets are a classic family food item, well in my opinion. They have always been easy to take out of the freezer and fry them or even heat them up in the microwave, & they are so simple to make, But OMG they are not on the list of healthy foods at all. So I wanted to remake them with a healthier twist. Here’s how I did it.
You Will Need:
- 2 lbs Fresh Boneless Skinless Chicken Breast (cut into 2″ squares like a nugget shape)
- 2 whole eggs
- 1 cup unsweetened soymilk
- 2 cups coating mixture (half whole grain bread crumbs & half almond or spelt flour)
Preheat your oven to 350°
First, in one bowl whisk together eggs & soymilk, then place coating mixture in another bowl.
Next, take the pieces of chicken, dip in milk/egg mixture, then dip into coating then repeat once more. So that its double coated.
Next, Place your cooking pan and cook for 18-20 mins until fully cooked in the center
Tip Alert! Cook with the pan covered with foil and the chicken will hold the moisture and will be juicier on the inside.
