
With many other “remakes” that I have made and LOVE, Lasagna wasn’t really one that I thought about at first when I changed to a healthier lifestyle. It’s honestly pretty easy to make and SO SO GOOD! I know I say that with everything, but this recipe I can say, so far, is my cake topper! I let everyone try it and KNOW ONE could tell that it was a lot healthier than regular lasagna.
Here’s what you will need.
2 cups Marinara sauce (see Healthy Pizza for recipe)
1 egg
1 cup 0% plain greek yogurt
1 8oz block fat-free Neuchâtel cheese
2 cups shredded fat-free low moisture mozzarella cheese
2 Tbs Italian seasoning (halved into 1Tbs)
1/2 lb chicken sausage
1lb ground turkey meat
1/2 cup diced onions
10oz cooked whole grain lasagna noodles (I LOVE Ronzoni Healthy Harvest Whole Grain!)
Preheat your oven to 350°
First, cook your onions well done, then add both the chicken sausage & turkey meat and cook until browned, strain, set aside. I added 1Tbs italian seasoning into mine while cooking it.
Next, in a bowl mix the Neufchatel cheese, greek yogurt, egg, and 1 Tbs Italian Seasoning.
Now, Start layering the lasagna like normal, marinara, cheese mixture, meat, mozzarella, then noodles.
Add all remaining shredded cheese (maybe a little more 🙂 ) to the top layer.
Bake for for 30-35 mins until cheese is melted and browning around the edges.
