Heres what you will need:
3 Boneless Skinless Chicken Breast, cut into slices
8 Lo-Carb Whole Grain Tortillas
16oz Greek Yogurt
1 Avocado
2 Cups Cheese
1/2 cup Homemade Taco Seasoning
{2 tbsp chilli powder, 3 1/2 tbsp paprika, 3 tbsp ground cumin, 1 1/2 tbsp onion powder, 1 tsp garlic powder, 1/4 tbsp cayenne pepper, 2 tsp dried oregano, 1 tbsp ground black pepper}
First, with about 1 tbsp of olive oil, start to grill chicken, mix in the taco seasoning while cooking. Let the chicken cook thoroughly then keep on simmer.
Next, Shred the Chicken (see How to Shred Chicken Easily in your Mixer)
Next, Remove Avocado from shell and seed, mix in with greek yogurt.
Once blended, place it a storage bag to easily dollop onto tacos.
Now Apply your favorite toppings but use the Greek yogurt/Avocado mixture in replace of sour cream. Hope you enjoy this healthy remake of Chicken Tacos.
