Mac and Cheese is a side that I think is everyones favorite, but normally it’s not really healthy. This healthier delicious remake of the classic pasta dish will leave everyone wondering, is it really healthier? Yes! I LOVE IT too! I have to say, I’m a food lover, and when becoming a healthy foodie, Some things I really thought I would just remove from my cookbook. Until Now!
Here is what you will need:
10 oz Whole Grain Penne Or Elbow noodles (I used Ronzoni Healthy Harvest Whole Grain Penne Rigate)
2 Tbs Olive Oil
2 Tbs Minced Garlic (about 3-4 cloves)
2 1/2 Cups No-Salt Chicken Stock
6 Tbs Flour, I used spelt, but you can use almond or wheat as well
1/2 Tsp Sea Salt
1 Tsp Fresh Ground Black Pepper
Olive oil cooking spray (see DIY Cooking Spray for a better cooking spray)
2/3 cup Skim Milk or Reduced Fat Milk
1 1/4 cup Fat Free Extra Sharp Cheddar Cheese
4 oz (or half a block) fat free Neufchatel Cheese (Fat Free Cream Cheese)
6 oz 0% Plain Greek Yogurt
First, preheat your oven to broil
Next, Cook your Pasta Noodles as normal, strain, set aside.
Next, in a deep pot, add olive oil and heat on medium heat, add garlic and stir for about 2 minutes, dont burn the garlic.
Add in 1 cup of the chicken stock and boil for a couple of minutes, reduce heat to simmer.
In a separate bowl, mix milk, flour and remaining chicken stock.
Whisk until the flour is no longer clumpy.
Add mixture to Chicken Stock/Garlic/Olive oil in deep pot. bring to a bowl and cook until sauce starts to thicken.
Remove from heat, add Sea Salt, Black Pepper, Greek Yogurt, Neufchatel Cheese, and 1/4 cup Cheddar Cheese. Stir until Neufchatel and greek yogurt are combined and smooth.
Add noodles to sauce and stir until combined
Grease a 9×13 cake pan with Olive Oil cooking spray
Spread mixture into pan evenly.
Sprinkle remaining cheddar cheese, and place pan into preheated oven.
Broil the dish until cheese is melted and golden around the edges.
