So I know many of us have a New Years resolution for either dieting, loosing weight, or eating healthier. I have talked about my journey a few times in some of my prior “healthier” recipe post. The last few weeks have really flew by and I had a whole list of post that I wanted to do, but with the craziness of the season going on, I failed to do so. One thing that I know for sure though, is that Im back! LOL! Another thing I know, is that eating Healthy is something I try to do since I have had such success in loosing weight. The holidays really REALLY steered me from my normal routine and I even slacked off some on my health journey. So Back on my journey I go, and back on the lifestyle that has brought me such success in results. OK IM DONE rambling LOL. Here is a healthy Meatload recipe that is actually really good and super easy!

Preheat your oven to 375.
Here is what you will need:
1lb Ground Turkey
2 eggs
1 cup whole wheat breadcrumbs
¼ cup milk
¾ cup ketchup ( ½ separate for sauce)
½ onion diced
½ cup healthy BBQ sauce (¼ for sauce, ¼ for mixture)
1 ½ Tbs minced garlic
½ cup low sodium cream of mushroom (or chicken) soup
½ Tbs Worcestershire Sauce
1 Tbs oregano
1 Tbs thyme
1 Tbs basil
First, take your diced onion, herbs (oregano, basil, thyme) and garlic and sauté in a separate pan. Set aside.
Next, take the Worcestershire sauce, ketchup, BBQ sauce and stir together. Once blended, split sauce into half (half for meatloaf, and half for topping)
Now in a large bowl add the sautéed onions, eggs, ground turkey, milk, breadcrumbs, cream of mushroom soup, and ketchup mixture.
Now mix all ingredients together, Don’t worry I know its not going to look very appeasing!
now place the mixture onto pan and cover with foil.
cook for an hour OR until internal temps reach 170.
once its done, add the remaining sauce at let cook uncovered for another 10 mins.
trust me I have made many meat loafs that have become quiet dry when using turkey, OR either having no flavor. This recipe is defiantly not that! depending on the pan, i have noticed sometimes you can cut or change up some of the ingredients (like using less milk, or more veggies)
