Last year I made the quick & easy Rotel Dip thats great for get togethers and game season. Its another one of our favorites and its so easy to make. Going on our journey to becoming healthier alot of stuff we removed from our diet. The Rotel Dip was one, and we were talking about nachos and I thought Hmm…. There is way to make it healthy, and after a trip to Whole Foods, Here is the WONDERFUL recipe.
Heres what you will need:
1lb Lean Ground Turkey
160z Non-Fat Plain Greek Yogurt
1 Can Rotel Tomatoes (strained)
1 3 oz block light cheese (Cubed)
1 12oz block organic natural queso cheese
2 Tbs taco seasoning (see Healthy Tacos)
Lightly Salted Tortilla Chips
First, I cooked & strained the turkey meat.
Next, I added all ingredients into the slow cooker
Once the cheese is melted, then I added the taco seasoning starting by the 1/2 Tbs (to make sure its seasoned well, I ended up using 2 Tbs)
Next, It was becoming a little to watery, so I added some more greek yogurt.
Once melted, it can be served as a nacho dip, or on top of chips along with your favorite toppings like lettuce and tomatoes for homemade, healthy Nachos.
