Mexican dishes are a favorite of my best friend Jerome, & these stuffed peppers are a hit with the both of us. They are so good, healthy, and very easy to make. Since we started our journey to get fit and healthier, We’ve tried to cut eating out as often as we can & Mexican restaurants have always been a favorite of ours, so cooking it at home helps us make it healthy and control everything thats in it. Here is how to make it
Here’s what you will need:
2 lb ground turkey (or ground chicken)
7 tbs homemade taco seasoning (see here on how to make it)
9 green bell peppers (8 peppers hollowed, 1 diced)
1 cup shredded cheese (Tip Alert for the cheese, See at the end of the post)
1 yellow onion diced
1red onion diced
1 clove garlic, minced
Preheat your oven to 350
First, cook the ground turkey and diced onions, garlic, & pepper together until fully cooked
Add in the taco seasoning
Next, stuff each hollowed pepper with the cooked mixture, then sprinkle cheese on top
Place on a cooking pan and bake 15-20 mins, until the pepper is a darker shade green and softer.
Tip Alert: I have found that its better to buy a block of lower calorie less fat cheese and shred yourself (or food processor) or Sargento has new low calorie “ultra thin” cheese slices that are perfect to put on top
